Patterson Kitchen + Bar, the signature restaurant at Hotel Hartness, has announced the appointment of Curtis “Chef Bear” Hillard as Executive Chef along with the debut of a newly developed menu that reflects his culinary vision.
Classically trained in both savory and pastry disciplines, Chef Bear brings more than four decades of experience shaped by private clubs, premier resorts, and fine-dining kitchens across the country. Raised in Columbus, Ohio, he developed his foundation in high-standards environments before advancing into leadership roles at notable destinations including Pinehurst Resort, The Greenbrier, Château Élan Winery & Resort, and The Foundry Park Inn & Spa. He later served as chef and partner of Nouveau Bistro in Atlanta’s Buckhead district, which earned local acclaim and Wine Spectator’s Award of Excellence.
Chef Bear’s approach is grounded in classical French technique, interpreted through a modern American lens. His menus emphasize balance, seasonality, and ingredient integrity, informed by a holistic perspective that bridges both savory and pastry kitchens. His commitment to technical excellence also includes supporting preparation for the prestigious Bocuse d’Or competition in Lyon, France.
Under his leadership, Patterson Kitchen + Bar has launched a new menu rooted in a hyper-local, seasonal approach. Drawing heavily from on-site Hartness Farm as well as a network of regional purveyors, the menu is designed to highlight the freshest ingredients available at any given time, with dishes evolving naturally as new produce comes into season. While the culinary program introduces a refreshed perspective, several guest-favorite dishes will remain, offering a sense of familiarity alongside the new direction. The result is a menu that reflects the rhythms of the region and the integrity of its ingredients.
Beyond the kitchen, Chef Bear has been recognized for both his leadership and visibility within the industry. He is a member of the James Beard Foundation, has appeared multiple times on the Richard Florzak Podcast, with an upcoming episode focused on his role at Patterson, and has earned competitive honors across both pastry and savory disciplines.
